Piaya is a round, flat and flaky unleavened bread filled with Muscovado sugar and sprinkled with sesame seeds. This sweet and special delicacy is a pride of Bacolod City, Negros Occidental being the “Sugar bowl of the Philippines”. When it comes to Piaya, Bongbong’s has always been my first choice.

Preparing Piaya in the Station

Bacolod’s very own piaya is best served when hot. That is why every Bongbong’s branch has their Hot Piaya Station. While customers enjoy its freshness, they are able to see how it is actually prepared.

The piaya dough is filled with a kind of sugar called Muscovado. The soft dough is rolled and flattened with the use of a rolling pin. These pieces of dough are arranged in rows and columns on a hot plain sheet. The crew carefully flips it when one side is hardened. The prepared piaya comes with original and Ube flavors. A piece of original piaya is as cheap as Php3.50 while an Ube piaya costs Php4.00.
